Caro's is a pizzeria built around a hand-made dough I've been refining for half a decade. The obsession is two decades old. It started on the Jersey Shore, sharpened on Staten Island, eating at world-famous slice shops like Denino's and Joe and Pat's.
I've studied dough from Trenton to Newark, Staten Island to Brooklyn to Queens to the Jersey Shore, trying to bring that pizza, that slice I've craved since a little kid on NJ Transit, riding the subway, to Berkeley County and the Charleston metro.
The oven is a Baker's Pride Y-600. That classic slice shop behemoth you'll see in Sopranos, in a Spike Lee movie, a steel workhorse in the city. I pulled it out of a tri-state pizzeria and brought it down here in a box truck myself.
I'm bringing the pizza I grew up with to a place that deserves it. The only way I know how. The right way.
